MOTR Recipe: David's Junk

I don't know if this is a real recipe or not, David said someone told it to him and called it "shipwreck" but when I googled recipes for shipwreck, it wasn't even close.  Plus we tweaked it a bit from what he was told, so... I'm calling it "David's Junk"... if you are okay with eating KFC famous bowls, you should not mind this.

Ingredients:

1 lb. ground beef, browned, drained

2 packages instant potatoes, four cheese flavor (betty crocker is good)

1 can corn

Doritos (any flavor, but I prefer nacho cheese)

Shredded cheese such as cheddar or colby jack

Find a casserole dish and start layering with ground beef, then mashed potatoes, cheese, corn, more ground beef, potatoes, cheese.  Then crush Doritos on top and bake at 350 for approximately 20 minutes.

There can be lots of variations to this, but this flavor combination is by far the best in my opinion!!

Red-Neck Turtle Burgers
 
Handmade ground beef patties, topped with sharp cheddar cheese, wrapped in a bacon weave, then the next step, add hotdogs as the heads, legs with slits for toes and tail.   Next step.  Place on an oven rack, covered loosely with foil and baked for 20-30 minutes at 400 degrees.  A little crispy, not too crunchy...just how a turtle should be, no?

Panera Macaroni & Cheese Recipe (copycat)

I snagged this recipe from RecipeZaar.

SERVES 6 -8 

Ingredients

  • 12 ounces pasta shells
  • 4 tablespoons butter
  • 8 tablespoons flour
  • 2 cups milk
  • 6-8 ounces grated vermont white cheddar cheese
  • 1 ounce grated American cheese (optional)
  • 1 egg (optional)

Directions

  1. 1
    Boil 2 oz of pasta shells. Slightly undercook the pasta. Set aside.

    Microwave 4 tbs of butter with 8 tbs of flour for two minutes, stirring with a whisk after each minute.

    Then slowly add 2 cups of milk, stirring with the whisk constantly.

    Microwave the entire mixture for several minutes, stirring after each minute, until sauce thickens and takes on a matte finish. How many minutes will depend on the power of your microwave. (Mine took about 6 minutes).

    Add grated Vermont white cheddar to sauce. The sauce should be hot enough that the cheese will melt as you stir. If not, you may add the cheese then microwave a little more.

    For an extra creamy sauce, pour a small amount of the pre-cheese sauce into a separate bowl, add one egg and beat vigorously, then return the reserved sauce to the original sauce.

    Add cheese to taste. I used an entire 8oz block.

    Add a dash of grated American cheese (optional).

    Combine pasta and sauce, then pour into a well-greased baking pan. The pasta will absorb some of the liquid, so don't worry if the mixture seems more liquid-y than the way you would normally serve pasta. I used a 9 by 9 inches pan.

    Bake at 350 degrees covered for about 25 minutes or until bubbling and starting to become golden.

MOTR Recipe: Easy Cheesy Tuna Casserole

This is another favorite in my house. And I'm all about easy but tasty food!

Ingredients:

1 can tuna (drained)
1 can cream of mushroom
1 package of mac and cheese (any kind- can even use the kind that has the cheese sauce)

Optional:
onions
tomato
fried onions
shredded cheese
frozen peas or corn

Prepare the mac and cheese according to package instructions. Add cream of mushroom and tuna. Mix together. Throw in onions and any other optional ingredients you want. Keep on low on burner until everything is heated through. If you want you can throw it in the oven for a thicker sauce and to melt shredded cheese if you added it.

That's it! It's super easy and tastes yummy! Everyone in my family likes it.

MOTR Recipe: Chili Cheese Dog Pizza

I know, this sounds odd, but it is GOOD! My husband was saying to me one day, "wouldn't it be cool if they made a chili cheese dog pizza?" which to me, sounded like a challenge- and I was up for it! We love pizza and we love chili cheese dogs, so why not have a chili cheese dog pizza? It's super easy, fast and YUMMY!

Ingredients:

Crust
: (I used to make the jiffy packages, but that takes a few more minutes and makes a bit of a mess.) I buy Pilsbury pizza crust, which you find near the tubes of biscuits.

Hot Dogs: You can use as few or as many as you want.

Chili: 1 can of no bean chili per pizza.

Cheese
: I use 1 cup of mozzarella before baking and then 1 cup of cheddar for the top when it comes out of the oven.

Chopped onions: Optional

Stretch the crust out on your pan. (Best if it's square or rectangle.) Pour chili on crust and spread it out evenly. Slice hot dogs into small piece and spread it out on the chili. Add onions. Spread mozzarella evenly on top. Bake according to crust instructions. After removing from oven, spread cheddar over the top and let pizza cool. Cut and serve.

Serves 3 adults or 2 adults and 2 small children.


This is a regular in our house and we all love it! It's cheap to make (ingredients cost less than 10 bucks total), it's a conversation piece and best of all, it tastes great!

MOTR Recipe: Tator Tot Casserole

Okay, okay. I know several of you are freaking out right now that I am writing something as domestic as a recipe! Believe me, I thought long and hard before I did it, lol.

But, I absofrickinlutely LOVE tator tot casserole, and since I made it for lunch today, I just had to share my recipe for it. I had never eaten it until I was around 21 and working at a mental health institution. I didn't even ask how it was made, I just kind of fiddled with it until I was happy with the result. And I know for you fine diners out there, this probably does not sound great, but embrace your white trash self and give it a try!

Must have ingredients:

tator tots
ground beef
cream of mushroom soup


Now, the amount of these would vary with family size. For my family of four which includes two smaller kid portions, I use one pound of beef, 1 can of cream of mushroom and like half a pound of tator tots.

Optional ingredients that I use:

onion (i just use the dried ones in the shaker)
frozen peas
shredded cheddar cheese


With these, I pretty much just add enough that it's noticeable, but not overpowering. The cheese can be as much or as little as you want. I do the frozen peas to trick my family into eating vegetables.

Okay, now comes the variation. If you want the whole thing creamier, you mix the tator tots in at the end. If you want it more dry, you bake a layer of tots on the bottom of a baking dish and then spoon the meat over top, then add another layer of tots and continue baking.

For creamier, I start the tots in the oven while I'm cooking the meat and then add them all together at the end.

To cook meat
: brown your hamburger and while it's cooking, add the dried onions. I also use a bit of seasoning salt on my meat. After you've drained the grease and the meat is brown, add the can of cream of mushroom, frozen peas and cheese and keep your meat on low until the tator tots are ready. Then, just spoon them in and mix it all up. Voila! Done!

You could jazz it up by adding fried onions to the top if you want as well, or even more cheese if you're baking it all.

As I mentioned, if you choose the variation where there's two layers of tots and you bake it, start the tots in the baking dish at the same time as the meat. Cook meat the same, then when it's done, spoon it over the bottom layer of tots. Then add another layer of tots to the top and bake it until the top tots are browned.
